After studying agriculture in Giessen, Sauerbier acquired an estate in Ueckermünde/Pomerania around 1920/21 and was a member of the Ueckermünde district council. In 1930, he moved to the Lower Taunus.
On 01.02.1932, he joined the NSDAP local group in Wingsbach, for which he became a member of the district council of the Untertaunus district. In 1933, he was appointed 1st district deputy and also took up a seat in the Nassau municipal parliament. Here he represented the urban district of Wiesbaden. In the following years, Sauerbier held various management positions in different agricultural institutions in the region. Among other things, he was chairman of the Kreislandbund in 1932, president of the Wiesbaden Chamber of Agriculture in 1933 and district and district farmer leader of the Untertaunuskreis from 1933-34. From the end of the 1930s, he held the position of provincial estate director.
He was responsible for the management of the estates and market gardens in the hospitals and welfare institutions under the jurisdiction of the Wiesbaden and Kassel municipal associations. In 1939-40 he did military service. He was then appointed provisional director of the Breitenau state labor institute near Kassel and the associated labor education camp (AEL) and was promoted to director on 16.03.1945 with retroactive effect from 01.11.1944.
At the end of the war, he was interned by the American occupying forces in the Darmstadt camp. He was released in September 1946.
