Lüstner initially attended the Realgymnasium in Wiesbaden and the agricultural school in Weilburg/Lahn. He then studied natural sciences and agriculture at the universities of Munich and Jena.
From 1897 until his retirement in 1935, he taught and researched at the "Geisenheim Teaching and Research Institute". From 1902 he was head of its plant physiology experimental station; he was appointed professor in 1908. Lüstner made a special contribution to pest control. From 1912 he was district commissioner for nature conservation in the administrative district of Wiesbaden.
Lüstner wrote articles on plant pathology and numerous works on Nassau history and the history of the Rheingau.
