Eichhorn studied veterinary medicine in Giessen and Munich and received his doctorate in 1953. From 1957, he was a veterinarian at the Wiesbaden abattoir. In 1966, he was transferred to the State Veterinary Administration of the State of Hesse, where he worked as an official veterinarian in the veterinary food hygiene monitoring department. From 1977 until his retirement in 1988, he was Veterinary Director and Head of the State Veterinary Office.

In addition to his profession, he was interested in the regional history of his homeland. He had been a member of the Association for Nassau Antiquities and Historical Research since 1953 and had been a member of the extended board since 1979. He had also been a member of the Historical Commission for Nassau since 1965. Eichhorn conducted research into local, church, regional, class and family history and published numerous works. He intensively researched Nassau's transportation history and development, particularly in the Limburg Basin, Taunus and on the eastern edge of Wiesbaden. He made key contributions to the history of his home village of Lindenholzhausen. He also wrote texts on the history of agriculture and commented on field names. Eichhorn was a member of the local advisory council in Wiesbaden-Dotzheim from 1973-81 and campaigned for the naming of a square in the center of Dotzheim after Pastor Johann Christian Reinhard Luja, among other things. For his achievements, he received the Silver Badge of Honor and the Letter of Honor of the State of Hesse in 1974, the Citizens' Medal of the State Capital of Wiesbaden in 1981, the Federal Cross of Merit on Ribbon in 1982 and the Badge of Honor of the Federal Association of Civil Servant Veterinarians in 1984. His urn grave is in the Dotzheim cemetery.
