Dietz trained as a machinist. In 1922, he joined Fichtel & Sachs in Schweinfurt as a toolmaker and became involved as works council chairman. Politically, he had joined the SPD.
From 1932 until his arrest on March 6, 1933, he was the local editor of the social democratic newspaper "Fränkischer Volksfreund" in Schweinfurt. He was imprisoned in Dachau concentration camp until December 18, 1933. He was then under police supervision for another two years. After working again at Fichtel & Sachs, he returned to Wiesbaden in 1939, where he worked at Glyco-Metallwerke until 1945.
After the Second World War, Dietz was a member of the reconstruction committee in Schierstein and was involved in the re-establishment of the SPD and the DGB. In 1946, Dietz was elected city councillor and was chairman of the SPD parliamentary group for many years. From 1948-60 he was trade union secretary and DGB district chairman. From 1960-66, he was a member of the city council as head of health and housing.
On his 75th birthday, he received the Wiesbaden Citizens' Medal in Gold and the Letter of Honor of the State of Hesse. He was awarded the title of "City Elder" in 1982. He was awarded the Wilhelm Leuschner Medal (1987). A street in Schierstein is named after him.
